The Perfect Bone Broth Recipe

This is my go-to bone broth recipe that I’ve perfected over decades. It’s the perfect blend between home cook and professional chef, uncomplicated but precise, ensuring you create the highest-quality broth possible with ease.

 A simple balance of high-quality ingredients and proper method, this recipe delivers outstanding results, whether you prefer chicken, beef, or pork bones.

Ingredients

  • 1-2 kg (2–4 pounds) Chicken or Turkey carcasses or Beef or Pork bones, ideally organic or free-range

  • 6 liters of filtered, spring, or alkaline water (enough so that the bones are covered)

  • 2 tbsp (30 mL) apple cider vinegar or lemon juice

  • 2 brown onions, quartered

  • 8 whole garlic cloves bruised (skin on)

  • 2 carrots, washed, and snapped in half

  • 2-3 bay leaves

  • 1 ½ tsp black peppercorns

The right ingredients are crucial for creating a nutrient-dense bone broth that is not only flavourful but extremely beneficial for your health.

Method 

Step 1: Preheat the Oven & Blanch the Bones
Preheat the oven to 200°C (400°F). Place the bones in a large stockpot, cover with cold water and bring to a boil. Simmer for 20 minutes to release impurities. Drain and discard the water.

Step 2: Roast for Depth of Flavour
Spread the blanched bones on a roasting tray. Roast until golden brown and deeply aromatic. This enhances the broth’s richness and depth.

Step 3: Simmer Low and Slow
Transfer the roasted bones to a large stockpot or slow cooker. Add all remaining ingredients and top with water. Bring to a simmer, then reduce heat to low. Cook uncovered for 12 to 24 hours, occasionally skimming off any foam. Let cool slightly before straining into glass jars or storage containers.

Chef’s Notes & Storage Tips

Tailor the Flavour: In the final 3 hours, layer in herbs such as turmeric, thyme, oregano, or star anise for additional depth. Vegetables like celery, leek, or fennel add natural sweetness and a rounded flavour profile.

Use Quality Bones: Choose organic or ethically raised bones for optimal nutrient content. Cuts like knuckles, feet, wings, and marrow bones will yield the most collagen-rich broth.
