Cinnamon spiced gingerbread men
Akin to a gingerbready fruit mince pie with the crumble of a short bread. I don't think you could get a more delicious Christmassy treat!
These cookies sit proudly at the top of the nice list when it comes to treats, made only from natural ingredients, free of gluten and refined sugars. These gingerbread men ran straight off the plate when I asked the kids to taste test them, I bet will do the same when you whip up a batch.
As with everything Intentionally Natural these cookies are made with ingredients that Arnt on the naughty list. So you won't mind when they magically run off the plate, well except if you do get to try one then you will definitely mind…
Ingredients:
70g grass fed butter, soften
1 ½ cups gluten free or white spelt flour, sifted
½ cup almond meal
¼ cup whole earth brown sugar replacement (find this Monk fruit sweetener at countdown or new world)
⅓ cup apple syrup (my go to is Chantal organics)
1 ½ tsp ground ginger
2 tsp ground ginger
¼ tsp cardamom
¼ tsp nutmeg
Pinch of Celtic salt
Method:
Place butter and monk fruit sweetener in the bowl of an electric mixer (or a large mixing bowl if you're going old school with a handheld mixer). Beat together for 4-5 minutes or until creamy and light, scrape down the sides if necessary. Add the spices, apple syrup and salt to the mix and beat again for a minute or until well combined. Add the flour, almond meal and baking soda then mix until the dough just comes together to form a smooth dough. Remove form bowl and in between 2tow pieces of parchment paper roll the dough out until 5mm thick then refrigerate for 30 minutes.
Preheat the oven to 160° (325 °F) while the dough chills. Once the dough is firm remove for fridge and Dust your cookie cutters with flour then cut into shapes reroll any remind dough as needed. Place cookies on a large, lined baking sheet and bake in the oven for 12 minutes. Remove for the oven then let cool on the try for 5 mins then move to a cooling rack to cool completely. Once cool dust with cinnamon and enjoy.
Cookies will keep for 2 weeks in an airtight container, if they last that long.
