Chai seeds have many nutritional benefits and are packed with nutrients that support gut, brain and beauty health and function. This is the best chai seed pudding recipe and a labor of love that has been perfected over the years. I really wanted to love chai pudding due to its nutritional benefits and the fact I love a sweet treat. From the many recipes I tried none hit the mark as being just right when it came to taste and texture. So, as I tend to do, I embarked on a journey to create the best chai seed pudding recipe that I'm sure you will also find just right!!
1½ cups almond milk
1 ripe banana
2Tbs almond butter
1 tsp vanilla extract or ¼ tsp pure vanilla paste
1 Tbs pure maple syrup
1 ½ tsp cinnamon, ground
A pinch of Celtic salt
⅓ cup chai seeds
In a blender add all ingredients excluding the chai seeds and blend for about 1 minute depending on the speed of the blender. Pour the liquid into a jar then stir in the chia seeds until well combined. Refrigerate for a minimum of 3 hours or overnight.
KEEP TIME: The chai pudding can be kept up to 4 days in the refrigerator.
Serves 2 - 4
If you have any alleges you can swap out the butter and milk in the recipe for alternative options that suite your personal requirements. Seed butters, coconut butter and alternative milks such as hazelnut, hemp, walnut, oat and coconut milk all work well in this recipe.
Top with your favorite topping such as:
- Fresh, freeze dried or frozen fruits such as berries
- Cacao nibs
- Rose petals
- Bee pollen
- Crushed nuts
- A serving of superfood, collagen or protein powder
- Fruit compote
